Georgia Southern Collards
A favorite since its introduction in the 1880s, Georgia Southern is noted for its tender, blue-green leaves and tolerance for both heat and cold. Plants can reach 2-3' tall. Very easy to grow.
Planting
Collards are very frost hardy and their flavor actually improve after a few freezes. Sow seeds outdoors and early spring to midsummer. Thin and weed young plants until they are established. Georgia Southern is slower to bolt than other collards and can tolerate summer heat.
Harvest
The most flavorful leaves are harvested during cool seasons. Cut leaves from the bottom of the plant as needed.
